摘要
“生麦曲自动化生产系统”使生麦曲各工序之间实现了流水线式连接贯通。对生麦曲干燥室内不同点生麦曲的感官质量及糖化力、液化力进行测定,均优于传统踏曲制生麦曲。分析机械化和自动化绍兴加饭酒酿造过程,进一步阐述生麦曲在黄酒酿造过程中的重要作用。
The automatic production system of raw wheat koji realizes the pipeline connection between the various processes of raw wheat koji.This study tested the sensory quality,saccharifying power and liquefying power of raw wheat koji at different points in the desiccation room of raw wheat koji,which was higher than that of traditional trampling koji.The mechanization and automation of Shaoxing Jia-fan-jiu brewing process,and the importance of yeast in raw wheat starter were analyzed in this paper.
