婴幼儿配方乳粉危害物分子预测及营养组分数据库的组建 被引量:1

摘要 根据国家标准GB10767和GB10765所述方法,搜集、整理并测定完善符合中国国家标准的婴幼儿配方乳粉中的营养组分;综合1998年至2019年所有婴幼儿乳粉产品及原料的食品安全事件及相关文献中涉及的内源及外源危害物,结合数据库技术建立婴幼儿配方乳粉营养组分及危害物分子数据库。基于分子指纹和相似性算法建立婴幼儿乳粉中危害物预测算法,预测出89种可能影响婴幼儿配方乳粉质量和安全的化合物。 According to the methods described in national standards GB 10767 and GB 10765,the nutritional components of infant formula milk powder were collected,sorted out and determined.The food safety incidents of all infant milk powder products and raw materials from 1998 to 2019 and the endogenous and exogenous hazards involved in relevant literature were integrated.Then a database of nutritional components and molecular hazards of infant formula milk powder was established based on database technology.Based on molecular fingerprint and similarity algorithm,89 compounds that might affect the quality and safety of infant formula milk powder were predicted.
