摘要
锌缺乏是全世界亟待解决的营养问题。目前市面上常见的补锌产品多为锌强化口服液、颗粒等药物,以食品作为载体的补锌产品仍较少。在现有的补锌食品中除营养包、婴幼儿辅食外,多为使用淀粉含量高的食品作为载体,制成面包、米粉等主食,在正常的饮食基础上补充额外的锌。乳制品也是很好的载体,其本身锌含量相对较高,再添加锌强化剂,可有效提高对锌的补充。在锌强化剂的种类方面,仍以有机锌为主,然而目前生物锌补充法日益受到重视,逐渐出现各类生物锌强化食品,因此生物锌在食品载体中的强化可能成为后续的研究重点之一。补充锌对于辅助治疗由缺锌引起的疾病具有良好的效果,但其中的不良反应仍不能忽视。如何通过食物载体进行锌强化来进一步减轻锌制剂带来的不良反应,仍需进一步研究。
Zinc is one of the essential elements for human beings,but zinc deficiency is a nutritional problem still needs to be solved.Recently,zinc oral solution,granules and other medicines are used as common zinc supplements(ZS),rather than food-based ZS.Most of ZS are added into bread and rice power,which contain a large amount of starch,except nutrient enhancement package and baby food.In addition,dairy products are also good carrier,because of its high zinc content,thus the acquisition of extra-additive zinc fortifier can be effectively improved.Organic zinc still plays the leading role in zinc reinforcers;however,the method of bio-ZS and food are currently attracting more attention.Therefore,the bio-zinc based food might be popular in further studies.Although ZS are effective in solving the diseases caused by zinc deficiency,the negative effect can’t be ignored.Therefore,how to reduce the adverse reaction of carrying food-based ZS should be studied in the future.
