摘要
植物抗氧化剂因其在食品以及医药上的重要作用,近些年来受到了广泛关注。本文总结了植物抗氧化剂的作用机制,简要地介绍了几种植物抗氧化剂茶多酚、生育酚和迷迭香在食品中的应用,以期为新型植物抗氧化剂产品的开发提供参考。
Plant antioxidants have received widespread attention in recent years because of their important roles in food and medicine.This article summarizes the mechanism of plant antioxidants and briefly introduces the application of several plant antioxidants,tea polyphenols,tocopherols and rosemary in food,in order to provide references for the development of new plant antioxidants.
