食用植物油中乙基麦芽酚测定干扰未知物分析 被引量:4

Identification of Unknown Interference Substance to the Determination of Ethyl Maltol in Edible Vegetable Oil

摘要 通过超高效液相色谱-三重四极杆质谱联用仪检测食用植物油样品,在乙基麦芽酚出峰保留时间附近出现易导致其结果误判的未知物,使用超高效液相色谱-四极杆/静电场轨道阱高分辨质谱联用仪对未知物进行鉴定,结果表明该未知物是乙基麦芽酚酮式异构体。该试验首次确证了乙基麦芽酚的烯醇式和酮式异构体,为掺假食用植物油准确鉴定提供技术参考。 The edible vegetable oil samples were detected by ultra-high performance liquid chromatography-triple quadrupole mass spectrometer, and there were unknown substances near the peak retention time of ethyl maltol, which could easily lead to misjudgment. Ultra-high performance liquid chromatography-quadrupole/electrostatic field orbitrap high-resolution mass spectrometer was used to identify the unknown, and the results showed that the unknown was the ketone isomer of ethyl maltol. This test confirmed the enol and keto forms of ethyl maltol for the first time. Formula isomers provided a technical reference for the accurate identification of adulterated edible vegetable oils.
