Analysis of Meat Quality Characteristics in Guangyi Black Pigs

摘要 为探讨广益黑猪的肉质特性,试验选取105 kg左右的健康广益黑猪28头,屠宰后取背最长肌分析肉质性状和营养成分。结果表明,广益黑猪肌肉肉色评分、大理石纹评分和贮存损失分别为3.48、3.13和1.94%;粗蛋白质和肌内脂肪分别为21.80%和3.29%。肌肉中氨基酸总量、鲜味氨基酸含量、必需氨基酸含量以及鲜味氨基酸占总氨基酸比例、必需氨基酸占总氨基酸比例分别为20.89%、16.17%、8.80%、77.41%、42.13%;肌肉总不饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸和饱和脂肪酸含量分别为58.43%、44.61%、13.82%和41.57%;肌肉中钾、钠、镁、钙、铜和锌含量分别为0.40%、390.96 mg/kg、290.07 mg/kg、32.32 mg/kg、0.30 mg/kg和14.84 mg/kg。测定结果显示,广益黑猪具有良好的肌肉品质。 The aim of this study was to evaluate the meat quality characteristics in Guangyi Black Pigs.A total of 28 Guangyi Black Pigs with average body weight of approximately 105 kg were slaughtered to measure meat quality traits and muscle nutrient composition.The results showed as follows:meat color score,marbling score and storage loss were 3.48,3.13 and 1.94%,respectively.The contents of crude protein and intramuscular fat were 21.80%and 3.29%,respectively.The contents of total amino acids(TAA),flavor amino acids(FAA),essential amino acids(EAA),FAA/TAA and EAA/TAA in muscle were 20.89%,16.17%,8.80%,77.41%and 42.13%,respectively.Meanwhile,the contents of total unsaturated fatty acids,monounsaturated fatty acids,polyunsaturated fatty acids and saturated fatty acids in muscle were 58.43%,44.61%,13.82%and 41.57%,respectively.The contents of K,Na,Mg,Ca,Cu and Zn in muscle were 0.40%,390.96 mg/kg,290.07 mg/kg,32.32 mg/kg,0.30 mg/kg and 14.84 mg/kg,respectively.These results indicated that Guangyi Black Pigs have good meat quality.
