瓜拉拿研究应用进展

摘要 瓜拉拿被广泛应用于化工、食品和医疗等领域,其根被亚马逊人用来煮茶,种子被磨成细粉,并用来制作药片、胶囊及其他功能食品。对瓜拉拿生理和营养特性、加工利用现状及其活性物质研究进展等方面进行了综述,并提出展望,以期为瓜拉拿新产品研发提供借鉴。 Guarana is widely used in chemical,food and medical fields.Its rhizome is traditionally boiled into a tea by Amazonian cultures.Guarana seeds are ground to a fine powder which is made tablets,capsules and other functional foods.In this paper,the physiological and nutritional characteristics,processing and utilization status and research progress of active substances of guarana were reviewed,and the prospect was put forward.Providing reference for new product development of guarana.
