摘要
鸭梨是一种营养极其丰富的水果,其果皮、果肉和果核都具有重要的利用价值,开发前景广阔。综述近几年来鸭梨中主要功能性成分多酚、黄酮类物质、熊果苷、膳食纤维等的提取及鸭梨汁、冻鸭梨、鸭梨渣制品等鸭梨食品的开发研究进展,并对我国鸭梨的利用前景进行展望,旨在为进一步研究提供参考。
Ya pear is an extremely nutritious fruit,and its peel,pulp and pit have important development and utilization values,and they have great development prospects.This article reviewed the research progress in the extraction of the main functional components polyphenols,flavonoids,arbutin,dietary fiber,etc.in Ya pear in recent years,and the development of Ya Pear juice,frozen Ya Pear,Ya Pear residue products,etc.,and prospected for the development and utilization of Ya pear in China,aiming to provide reference for further research and development.
