为了提高食品的安全性,需要采取严格的食品安全检验程序,避免人们食用有害食品而损害身体健康。现阶段,随着我国科技水平的提高和食品检验的规范化,我国的食品安全检测管理工作已经趋于正规化、专业化。食品微生物检验作为食品安全检测的重要内容,人们对其给予了更高的重视。食品微生物检验需要针对不同种类的样品采取合适的采集方法及检验方法,因此,本文对食品微生物检测的主要项目、样品采集方法以及检验方法进行了综述,期望能够为食品微生物检验工作提供参考。

In order to improve food safety,strict food safety inspection procedures need to be adopted to prevent people from eating harmful foods and harm their health.At this stage,with the improvement of my country’s technological level and the standardization of food inspection,my country’s food safety inspection and management work has gradually become more regular and professional.Food microbiological inspection is an important part of food safety inspection,and people have paid more attention to it.Food microbiological inspection needs to adopt appropriate sample collection methods and inspection methods for different types of samples.Therefore,this article reviews the main items,sample collection methods and inspection methods of food microbiological testing,and hopes to provide references for food microbiological inspection.
