摘要
以冬枣为试验材料,用2%壳聚糖溶液、50 mg/m L花椒提取液与2%壳聚糖复合溶液对冬枣进行浸泡处理,以清水浸泡为对照,4℃低温储藏,每隔5 d测定果实的腐烂率、失重率、硬度、可溶性固形物、可滴定酸、维生素C、丙二醛(MDA)、过氧化物酶(POD)活性等品质或生理指标,研究花椒提取液与壳聚糖复合膜对冬枣采后保鲜效果的影响。结果表明,2%壳聚糖涂膜、50 mg/m L花椒提取液与2%壳聚糖复合涂膜均能有效降低冬枣的腐烂率和失重率,维持良好的硬度,减少可溶性固形物、可滴定酸、维生素C等营养成分的消耗,抑制果实中MDA的积累,维持果实中较高的POD活性,但50 mg/m L花椒提取液与2%壳聚糖复合涂膜效果优于2%壳聚糖涂膜,能更好地维持冬枣的品质,提高果实的抗病性,延长保鲜期。
Using winter jujube as the test material,the winter jujube was soaked with 2%chitosan solution,50 mg/mL Zanthoxylum bungeanum extract and 2%chitosan composite solution.The immersion in clear water was used as the control,stored at 4℃and measured every 5 days.Fruit rot rate,weight loss rate,hardness,soluble solids,titratable acid,vitamin C,malondialdehyde(MDA)and peroxidase(POD)activity were measured and the effect of Zanthoxylum bungeanum extract and chitosan composite film on the preservation of winter jujube after harvest was studied.The results showed that 2%chitosan coating,50 mg/mL Zanthoxylum bungeanum extract and 2%chitosan composite coating could effectively reduce the decay rate and weight loss rate of winter jujube,maintain good hardness,reduce the consumption of soluble solids,titratable acid,vitamin C and other nutrients,inhibit the accumulation of MDA in the fruit,and maintain a higher POD activity in the fruit.The composite coating of 50 mg/mL Zanthoxylum bungeanum extract and 2%chitosan had better effect than 2%chitosan coating,which could better maintain the quality of winter jujube,improve the disease resistance of the fruit,and extend the shelf life.
