摘要
试验研究不同水平发酵饲料对广西三黄鸡生长性能、屠宰性能及肉品质的影响。采用单因子完全随机设计,选取1200羽85日龄健康、体况接近的广西三黄鸡(母),随机分为4个处理组,每个处理组3个重复,每个重复100羽。试验A组为对照组,饲喂基础日粮。试验B、C、D组分别添加含5%、10%、15%发酵饲料的全价饲料。试验期28 d。结果显示,与对照组相比,C组平均日增重、平均日采食量显著提高,料重比显著降低(P<0.05)。与对照组相比,各试验组均屠宰率、半净膛率、全净膛率、胸肌率、腿肌率有所提高,其中屠宰率达到显著水平(P<0.05)。与对照组相比,B、C、D组腹脂率显著降低,且各试验组之间差异显著(P<0.05)。与对照组相比,各试验组胸肌、腿肌pH值、肉色、系水力、肌内脂肪提高,滴水损失和剪切力降低,其中腿肌的剪切力达到显著水平(P<0.05)。发酵饲料提高三黄鸡胸肌、腿肌的肌内脂肪含量,其中C组的腿肌肌内脂肪显著高于对照组(P<0.05)。试验表明,发酵饲料对于广西三黄鸡的生长性能、屠宰性能、肉品质性状都有正向影响,10%添加比例具有最佳效果。
In the experiment,the effect of fermented feed with different mass fractions on the growth performance,slaughter performance and meat quality of Sanhuang chickens was studied.A single-factor completely randomized design was adopted,and 120085-day-old healthy,well-developed and well-developed Guangxi Sanhuang chickens(females)were selected and randomly divided into four treatment groups with three repeats in each group and 100 chickens in each repeat.The chickens in experimental group A were fed the basic diet as the control group,and experimental groups B,C,and D were added with the full-price feed containing 5%,10%,and 15%fermented feed,respectively.The test period was 28 d.The results showed that compared with control group,group C significantly increased the average daily gain and average daily feed intake,significantly reduced the material-to-weight ratio(P<0.05).Compared with the control,group B,C and D increased the slaughter rate,semi-clear rate,full-clear rate,pectoral muscle rate,and leg muscle rate,of which the slaughter rate reaches a significant level(P<0.05).Compared with control group,groups B,C and D significantly reduced the percentage of abdominal fat,and the differences between the test groups were significant(P<0.05).Compared with control group,group B,C and D improved the pH value,flesh color,water power,intramuscular fat of the pectoral muscles and leg muscles,reduced drip loss and shear force,and the shear force of the leg muscles reached a significant level(P<0.05).Fermented feed increased the intramuscular fat content of pectoral muscles and leg muscles.The intramuscular fat of group C was significantly higher than control group(P<0.05).The experiment indicated that fermented feed has a positive effect on the growth performance,slaughter performance and meat quality traits of Guangxi Sanhuang chickens,the 10%addition ratio had the best effect.
