复方黄芪颗粒对肉鸡肉品质的影响 被引量:7

摘要 试验旨在探究复方黄芪颗粒对肉鸡肉品质的影响。采用罗斯肉仔鸡进行饲喂试验,试验组分别添加0.87%、1.74%、3.48%复方黄芪颗粒,试验期42 d。结果显示,肉质含水量均在71%~78%之间,复方黄芪颗粒给药组含水量均高于对照组。胸肌和腿肌的pH2 h值和pH24 h值均在优质鸡pH值范围内,给药组pH值均大于对照组。胸肌中,1.74%组蛋白质含量最高,3.48%组氨基酸含量最高。腿肌中,0.87%组蛋白质含量最高,3.48%组氨基酸含量最高。肉质谷氨酸含量最高,依次为赖氨酸、天冬氨酸、亮氨酸、精氨酸、丙氨酸、缬氨酸、苏氨酸,且每100 g肉质中氨基酸含量均超过1 g。试验表明,复方黄芪颗粒添加量为1.74%效果最优,可明显提高肉品质。 The experiment aimed to explore the effect of compound Astragalus granule on the meat quality of broilers.The quality of broilers was evaluated by the broilers feeding experiment.The control group was fed with the basal diet for42 d,and the experimental group was supplemented with 0.87%,1.74%,and 3.48%compound Astragalus granules respectively for 42 days.The results showed that the water contents of the broilers’muscles from all groups were between 71%and 78%,and the water contents of muscles from the three compound Astragalus granule groups were higher than that of control group.The 2 h and 24 h pH values of breast muscles and leg muscles from all groups were in the pH range of high quality chicken,and the pH values of all the compound Astragalus granule groups were higher than that of control group.The protein contents of muscles from all positions and groups were around 20%.For breast muscles,the protein content of the 1.74%compound Astragalus granule group was the highest,and the amino acid content of the 3.48%compound Astragalus granule group was the highest.For leg muscles,the 0.87%compound Astragalus granule group was of the highest protein content,and the 3.48%compound Astragalus granule group was of the highest amino acid content.For chicken quality,glutamic acid content was the highest,followed by lysine,aspartic acid,leucine,arginine,alanine,valine,threonine.The amino acid content in every 100 g meat was more than 1 g The results showed that 1.74%compound Astragalus granules had the best effect and could significantly improve broilers’quality.
