明胶制备所用原料来源的研究进展

Research Progress of Raw Materials Used in the Preparation of Gelatin

明胶是一种重要的多功能性天然高分子,广泛应用于食品、照相、医疗等方面。传统的明胶制备所用原料多来源于陆生哺乳动物的皮、骨以及肌腱。然而,近年来受到如猪流感、口蹄疫等动物传染病及宗教信仰方面的限制,越来越多的人们开始从水产动物及家禽中寻找新的明胶制备原料。本文综述了近几年来国内外科研人员对不同来源的明胶的研究进展,并对明胶的发展做了展望。

Gelatin as an important multifunctional natural polymer is widely used in food,photography,medical and other aspects.Traditionally,gelatin is obtained from the skin,bone and tendon of land mammals.However,in recent years,due to restrictions on animal diseases such as swine flu and foot-and-mouth disease,as well as religious beliefs,more and more people are looking for new raw materials for gelatin production from aquatic animals and poultry.This paper reviews the research progress of gelatin from different sources in recent years,and prospected the development of gelatin.
