天然抗菌剂的研究进展

摘要 天然抗菌剂十分广泛,但目前利用程度较低。本文主要介绍了天然抗菌剂中多糖类抗菌剂、多肽类抗菌剂和多酚类抗菌剂。多糖类抗菌剂以甲壳素及壳聚糖为例,主要介绍了其研究热点和目前研究情况。多肽类抗菌剂以抗菌肽为例,主要介绍了两种抗菌肽的特点和一些抗菌肽的应用研究。多酚类抗菌剂以茶多酚为例,介绍了茶多酚的抗菌应用研究进展。同时本文还研究了不同抗菌剂的抗菌机理。 Natural antimicrobial is very extensive,but currently these are less widely used.In this paper,the polysaccharides,peptides and polyphenols are introduced.Taking chitin and chitosan as examples,the research focus and current research of polysaccharide antimicrobial was introduced.Taking antimicrobial peptides as an example,the characteristics of two antimicrobial peptides and the application of some antimicrobial peptides were introduced.Taking tea polyphenols as an example,the research progress of antibacterial application of tea polyphenols was introduced.Besides these the antibacterial mechanism of different antimicrobial was also studied.
