玛咖醇提物在饮料中的应用研究

摘要 超声波作辅助,用乙醇提取出玛咖中的有效活性成分,制得玛咖醇提物。以玛咖醇提物、白砂糖、柠檬酸、维生素C、β-胡萝卜素为主要原料,通过单因素试验和正交试验,研究了玛咖饮料的最佳配方。结果表明:玛咖醇提物1.5%,白砂糖7%,柠檬酸0.20%,维生素C 0.05%,β-胡萝卜素0.03%为最佳配方,此配方产品甜酸度适中,色泽均匀,有玛咖特殊的滋味和香味,感官评定得分为92分。 The effective active ingredient of Maca was extracted with ultrasonic assisted ethanol, and the appli-cation of Maca alcohol extract in beverage was studied. Using maca alcohol extract, white granulated sugar, citric acid, xanthan gum and beta carotene as main raw materials, the optimal formula of Maca beverage was deter-mined by single factor test and orthogonal test.The results show that: Maca alcohol extract 1.5%, white sugar 7%,citric acid 0.20%, Vitamin C 0.05%, β-carotene 0.03% is the best formula.The product has moderate sweetness,uniform color, special taste and fragrance of Maca, and the sensory evaluation score is 92 points.
