儿茶素与壳寡糖的协同抑菌作用研究 被引量:4

摘要 研究了儿茶素与壳寡糖复配后对大肠埃希氏菌(Escherichia coli)BNCC 185254生长的影响。结果表明,儿茶素与壳寡糖以1∶4复配时,有最佳的抑制效果。进一步从光谱学变化与结晶模式解析复配物的结构特征,结果显示更小的分子尺寸可能在提升复配物抗菌活性方面发挥重要的作用。因此,儿茶素与壳寡糖的复配物有望成为一种更有效的天然抑菌剂。 The effect of catechin mixed with chitosan oligosaccharide on Escherichia coli BNCC 185254 was determined.The results showed that the bacteriostatic effect was best when the mixture was 1∶4(catechin∶chitosan oligosaccharide,W/W).Furthermore,the structural characteristics of complex compounds were analyzed from the perspective of spectral changes and crystal patterns,and the results showed that the smaller molecular size of complex compounds might play an important role in enhancing the antibacterial activity.The mixture of catechin and chitosan oligosaccharide may be a more effective natural bacteriostat.
