谷物中4种交链孢毒素污染情况及检验方法探讨 被引量:6

摘要 目的了解河南省内小麦和大米中4种交链孢毒素污染情况,并对检验方法进行探讨。方法采集省内11个地市的小麦和大米各6份,合计132份样品。利用液相色谱-串联质谱内标法,同时对样品中交链孢菌酮酸(TeA)、腾毒素(TEN)、交链孢酚(AOH)、交链孢酚单甲醚(AME)进行检测,并对检验方法进行探讨。结果132份样品,4种交链孢毒素同时检出率为8.33%,2种检出率为34.1%,1种检出率为37.9%。小麦中≥1种毒素检出率高达89.1%,大米仅检出TeA,检出率为36.4%。此方法检测TeA、TEN绝对回收率较好,分别为87.86%、89.29%;AOH、AME绝对回收率分别为43.32%、41.22%。结论河南省内小麦中4交链孢毒素存在不同程度的污染,大米仅检出TeA,但总体而言,检出量较低,食品安全风险不大。液相色谱-串联质谱内标法检测TeA、TEN绝对回收率较好,数据真实有效。 Objective To investigate the contamination status of 4 kinds of alternaria toxins in cereals in Henan Province;to discuss the detection methods.Methods A total of 132 samples of wheat and rice from 11 cities were collected in Henan Province.The internal standard method of liquid chromatography tandem mass spectrometry(LC-MS/MS)was used to detect alternarone acid(TeA),tengtoxin(TEN),alternariol(AOH)and alternariol monomethyl ether(AME)in the samples simutaneously.The detection methods were compared and discussed.Results Among the 132 samples,the detection rate of all 4 kinds of alternaria toxins was 8.33%,the detection rate of 2 kinds of alternaria toxins was 34.1%,and the detection rate of 1 kind of alternaria toxin was 37.9%.The detection rate of more than 1 kind of toxin was 89.1%in wheat;only TeA was dectected in rice,the detection rate was 36.4%.The absolute recoveries of TeA and TEN were relatively better,which were 87.86%and 89.29%,respectively;while the absolute recoveries of AOH and AME were 43.32%and 41.22%,respectively.Conclusion There were different degrees of contamination of 4 kinds of alternaria toxins in wheat and TeA contamination in rice in Henan Province.The general detection level was low,and the risk of food safety was relatively low.The absolute recovery rates of TeA and TEN by LC-MS/MS internal standard method is good,and the data is true and valid.
