摘要
蒸粮出甑熟红糁或流酒后糟醅的喂料出料是白酒酿造过程中的一项重要工艺环节,其中加浆水闷堆糊化的好坏与产品的质量和产量息息相关。研究通过对机械化上料的试验探究,从试验结果的出酒率,流酒品质以及酸度、酯度与传统工艺操作方式进行对比分析。结果表明,机械化上料试验的各项流酒指标均能达到工艺要求,与传统工艺操作方式并无差异,且大大降低了工人劳动强度,为提升白酒酿造过程的机械化和自动化水平奠定了基础。
Feeding and discharging of steam grain and distill red grits or distill fermented grains is an important technical procedure in Baijiu production.The quality of mashing by adding slurry water is closely related to the quality and output of products.In this study,through the experiment of mechanized feeding,the yield,quality,acidity and ester degree of distillate were compared with the traditional process.The results show that the indexes of the mechanized feeding test can meet the requirements of the process,and there is no difference with the traditional process operation mode,and the labor intensity of the workers is greatly reduced,which lays a foundation for improving the mechanization and automation level of the liquor brewing process.
