5株双歧杆菌代谢产物及细胞中脂肪酸构成的气相色谱—质谱分析 被引量:3

摘要 采用气相色谱—质谱联用(GC-MS)技术,检测并分析比较了5株双歧杆菌代谢产物及细胞中脂肪酸的构成。结果表明,不同双歧杆菌脂肪酸含量在代谢产物之间差异较为明显,在细胞之间有一定的差异,同种不同源的双歧杆菌菌株之间(动物双歧杆菌A6和BA-5)也存在着一定的脂肪酸差异;棕榈酸(C_(16:0))、硬脂酸(C_(18:0))、二十四烷酸(C_(24:0))为各双歧杆菌代谢产物及细胞中的主要脂肪酸;各菌株代谢产物中,C_(16:0)在5组组间差异显著(P<0.05),且C_(16:0)与C_(18:0)的质量浓度比(ρC_(16:0)∶ρC_(18:0))为2.607~3.120,乙酸和乳酸的浓度比(C乙酸∶C乳酸)为2.085~2.295。与代谢产物相比,各菌株细胞中未检测出芥酸(C_(22:1n-9))、二十四碳烯酸(C_(24:1n-14))、二十碳五烯酸(C_(20:5n-3))。 Gas chromatography-mass spectrometry(GC-MS)was used to analyze fatty acid profile in metabolites and cells of five strains of Bifidobacterium.The results showed that the fatty acid content of different Bifidobacterium was significantly different among the metabolites,and there were some differences a-mong the cells.Differences of fatty acid were also found among the same Bifidobacteriiumstrains derived from different sources.Methyl palmitate(C_(16:0)),methyl lignocerate(C_(24:0)),and methyl stearate(C_(18:0))were the main fatty acids in metabolites and cells of the five strains.Among them,the C_(16:0) was significantly different(P<0.05),and the content ratio of C_(16:0) to C_(18:0) was between 2.607 and 3.120;the content ratio of acetic acid to lactic acid was between 2.085 and 2.295.Compared with the metabolites,methyl erucate(C_(22:1n-9)),methyl nervonate(C_(24:1 n-14)),methyl 5,8,11,14,17-eicosapentaenoate(C_(20:5 n-3))were not detected in the cells of the five strains.
