摘要
从青海高原自然发酵酸奶中通过定向分离出51株乳酸菌,经形态、生理生化和16S rDNA鉴定,该菌株为乳酸乳球菌乳酸亚种(L.lactis subsp.Lactis)。采用改良M17琼脂培养基进行培养,实验选革兰氏阳性菌、革兰氏阴性菌、酵母菌和霉菌作为检测指示菌,对其抑菌谱进行研究,结果显示:乳酸菌产抑菌物质具有较广的抑菌谱,对革兰氏阳性菌有很好的抑制作用,对部分革兰氏阴性菌有抑制作用,对酵母菌、霉菌没有作用。
51 strains of lactic acid bacteria are isolated from Qinghai Yoghurt.The strain is identified by morphology,physiology and biochemistry and 16S rDNA.The strain is Lactococcus lactis subsp.Strains were separated by using Employ M17agar medium.The Gram-positive bacteria,Gram-negative bacteria,yeast and mould were selected as the test indicators,and the antimicrobial spectrum was studied.The results show that lactic acid bacteria have a wide spectrum of antimicrobial substances,which can inhibit Gram-positive bacteria,some Gram-negative bacteria,but not yeast saccharomycetes and mould.
