淮安食品企业微生物检验岗位调查与分析

摘要 本文对淮安市部分食品企业的微生物检验岗位情况进行调查。结果表明,被调查食品企业中检验岗工作人员从业年限偏短,微生物检验过程中常用仪器和设备的管理及使用非常重要,培养基制备过程、灭菌过程、存贮过程都特别重要,无菌室紫外线杀菌最多,从业人员要定期接受安全防护知识培训,对食品接触面需进行微生物控制,并掌握微生物检测理论及技能,目前食品企业微生物检测依据主要是国家标准。调查结果为微生物检验理论及实践教学提供参考。 Some food enterprises in Huai’an City were investigated on the status of microbiological testing posts.The results showed that the working years of the inspection staff in the investigated food enterprises were short,the management and use of commonly used instruments and equipment in the process of microbiological inspection were very important,the process of medium preparation,sterilization and storage were particularly important,the ultraviolet sterilization in the sterile room was the most,the employees should receive regular training on safety protection knowledge and the microbiological examination should be carried out on the food contact surface.Microbiological detection of food enterprises is mainly based on national standards at present.The results provide a reference for the theory and practice teaching of microbiological testing.
