滨州市谷物及蔬菜中铅、镉、总砷暴露量及风险评估 被引量:7

The exposure and risk assessment of lead,cadmium and arsenic in cereals and vegetables in Binzhou City

摘要 目的通过监测2017年-2019年滨州市谷物及蔬菜中铅、镉、总砷含量,分析样品检测数据中污染物含量平均值,含量范围及检出率等,评价经摄食产生的健康风险。方法依据滨州市食品风险监测方案,采集该地区市售谷物和蔬菜,采用电感耦合等离子体质谱法测定铅、镉、总砷的含量,采用目标危害系数法评估暴露人群健康风险。结果共采集谷物类样品80份,测得铅,镉,总砷含量均值及检出率分别为0.0198 mg/kg(66.2%)、0.0126 mg/kg(60.0%)、0.0476 mg/kg(95.0%)。采集蔬菜样品397份,测得铅、镉、总砷含量均值及检出率分别为0.0167 mg/kg(43.3%)、0.00644 mg/kg(62.2%),0.0215 mg/kg(73.8%)。谷物类及蔬菜类复合风险值(TTHQ)分别为0.914、0.342。结论滨州市谷物及蔬菜中铅、镉、总砷的膳食暴露状态为安全水平,但谷物中砷对人体健康存在潜在风险。 Objective To investigate the contents of lead(Pb),cadmium(Cd)and arsenic(As)in corps and vegetables from 2017 to 2019,to analyse the mean values,value ranges and detectable rates of these metal contaminants,and to evaluate the health risks of heavy metal intake.Methods The cereal and vegetable samples were collected in markets,underpinned by the food risk monitoring program of Binzhou City.The contents of lead,cadmium and arsenic were determined by inductively coupled plasma mass spectrometry.The target hazard quotient(THQ)method was used to evaluate the health risk of exposed population.Results In this study,80 cereals were collected,and the average contents and detectable rates of Pb,Cd and As were 0.0198 mg/kg(66.2%),0.0126 mg/kg(60.0%)and 0.0476 mg/kg(95.0%),respectively.397 vegetables samples were also detected,and the average contents and detectable rates of Pb,Cd and As were 0.0167 mg/kg(43.3%),0.00644 mg/kg(62.2%)and 0.0215 mg/kg(73.8%),respectively.The TTHQ values of cereals and vegetables were 0.914 and 0.342,respectively.Conclusion Dietary exposures of Pb,Cd and As in cereals and vegetables over the two years in Binzhou population have maintained at a safe level,but the content of As in cereals suggests a potential risk to human health.
