摘要
防腐剂是能抑制微生物活动,防止食品腐败变质的一类食品添加剂。甜味剂是指赋予食品甜味的物质。国家食品安全标准中所用的仪器具有各自的局限性,对于复杂样品容易导致假阳性结果的误判。用液相色谱串联质谱仪对食品中10种甜味剂和防腐剂检测,将是一个快速高效、低成本、高准确度、高精密度、适合于实验室批量分析的方法,对食品中常见防腐剂、甜味剂的检测需求具有重要意义。
Preservatives are a kind of food additives that can inhibit microbial activities and prevent food spoilage. Sweeteners are substances that give food sweetness. The instruments used in the national food safety standards have their own limitations, which can easily lead to false positive results for complex samples.Liquid chromatography tandem mass spectrometry(LC-MS/MS) is a rapid, efficient, low-cost, high accuracy, high precision and suitable for batch analysis in laboratory. It is of great significance for the detection of common preservatives and sweeteners in food.
