油茶粕保鲜膜贮藏保鲜砂梨的应用研究 被引量:2

摘要 包膜处理砂梨,对比分析了油茶粕保鲜膜的贮藏保鲜效果。结果表明,随着贮藏时间的延长,砂梨中有机酸含量、还原糖含量及可溶性固形物逐渐下降,失重率提高,多酚氧化酶(PPO)和过氧化物酶(POD)酶活下降,但用包膜处理的梨这些指标下降速度和失重率增加远低于未用包膜处理的砂梨。油茶粕提取物添加的保鲜膜能明显减缓有机酸含量、还原糖含量及可溶性固形物的下降和失重率的增加速度,也能明显降低PPO和POD酶活。油茶粕提取物添加的保鲜膜对砂梨的贮藏保鲜起到促进作用。 The preservation effects of film,which prepared with camellia meal extracts,on pear was analyzed in this paper.The results showed that with the increase of storage time,the content of organic acid,reducing sugar,and soluble solids in pears gradually decreased,the weight loss rate increased,and the activities of polyphenol oxidase(PPO)and peroxidase(POD)decreased,but these indicators of pears treated with films decreased in speed and weight loss.The rate of decrease in organic acid,reducing sugar,and soluble solids and increase in weight loss was much lower than that of the non-encapsulated pear.The film added with camellia meal extracts can significantly slow down the decrease in content of organic acid content,reducing sugar,and soluble solids,and increase in weight loss,and can also significantly reduce the activity of PPO and POD.The film added with camellia meal extracts promoted the preservative effect on pear.
