摘要
研究了化学-酶法提取小麦麸皮中的纤维素和膳食纤维素的生产工艺流程,并确立了采用乙醇脱脂、混合使用酸性蛋白酶与α-淀粉酶去除蛋白质和淀粉的工艺,该方法能有效除去小麦麸皮的脂蛋白和脂肪,为进一步深加工奠定基础。
Fiber and dietary fiber in wheat bran were extracted by chemical and enzymatic method,which production process has been studied.The technology of removing proteins and starches by ethanol degreasing and combination of acidic protease andα-amylase has been determined.This method could effectively remove lipoprotein and fat from wheat bran.It laid a foundation for further processing.
