水杨酸对葡萄果实酚类物质积累的影响 被引量:3

摘要 为了探究外源水杨酸对葡萄果实酚类物质积累的影响,以极早蜜葡萄为试材,分别于幼果期、幼果期+转色期、幼果期+转色期+成熟期各喷施100 mg/L的水杨酸(SA),采用常规生理生化方法和HPLC法测定了果实中多酚类物质的含量。结果表明,与对照相比,喷施SA后24 h内成熟果实的酚类物质含量无明显提高;在幼果期、转色期和成熟期均喷施SA后,成熟果实在0~6 h的酚类物质含量有明显提高;而幼果期和转色期喷施SA后,成熟果实在6~24 h的酚类物质积累作用较强;仅幼果期喷施SA对成熟果实中多酚类物质积累的影响不明显。对葡萄成熟果实的酚类物质而言,转色期、成熟期喷施SA比幼果期喷施SA对促进酚类物质积累的效果更明显。 To explore the effect of exogenous salicylic acid on phenolic compounds accumulation in grape berries,this paper used Jizaomi grape as test material,spraying 100 mg/L salicylic acid(SA)at young fruit stage,young fruit stage+color changing stage,young fruit stage+color changing stage+mature stage,and determined the content of polyphenols in berries by conventional physiological and biochemical methods and HPLC method.The results showed that compared with the control,the content of phenolic compounds in mature fruits did not increase obviously within 24 h after spraying SA;After spraying SA at young fruit stage,color changing stage and mature stage,the content of phenolic compounds in mature fruits increased obviously within 0 h to 6 h;However,after spraying SA in young fruit stage and color changing stage,the accumulation of phenolic compounds in mature fruits was stronger within 6 h to 24 h;Spraying SA only at young fruit stage had no obvious effect on the accumulation of phenolic compounds in mature fruits.For phenolic compounds in mature grape berries,spraying SA at color changing and mature stage on the accumulation of phenols is more effective than spraying SA at young fruit stage.
