摘要
本文从近期的食品安全新闻热点事件——"香港婴配奶粉可能含有致癌物"切入,对事件中涉及到的主要污染物——氯丙醇酯类化合物、缩水甘油酯类化合物、氯丙醇类化合物以及缩水甘油进行了深入科普,对上述污染物的生成途径、毒性和限量进行了详细解读,在技术上为关心婴儿配方食品安全问题的普通消费者提供了观察角度。文章最后介绍了食品中CEs和GEs的两种质谱检测方法——直接法和间接法,并对两种方法进行了对比,为食品检测人员提供了技术参考。
In this article,two kinds of worldwide concerned food pollutants,chloropropanol esters(CEs)and glycidol esters(GEs)are popularized based on the recent food safety event that"Hong Kong infant formula may contains carcinogens".By interpreting the formation,toxicity and maximum residue level(MRL)of pollutants mentioned above,the technical observation angle is provided for the consumers who concern about the safety events of infant formula.At the end of this article,two determination methods of CEs and GEs in foods by mass spectrometry,the direct method and indirect method,are introduced and compared,which provide technical reference for food inspectors.
