不同无糖绿茶饮料中主要成分及理化性质分析 被引量:2

摘要 为了对不同品牌不同产地的无糖绿茶饮料中滋味物质进行品评,从市场上收集了3个产地9个品牌的13种不同的绿茶饮料。对其茶多酚类物质、氨基酸类物质、咖啡因、可溶性固形物、pH以及感官评价进行分析研究。结果表明:不同的绿茶产品在主要滋味物质、p H以及感官评分方面均存在显著差异,且同一品牌不同产地的绿茶饮料在感官评分上也存在差异。这13个不同的绿茶饮料其茶多酚质量浓度符合国家标准的有11个,咖啡因质量浓度符合国家标准的有12个。 In order to evaluate the taste substances in sugar-free green tea drinks of different brands and different producing areas,13 kinds of green tea drinks of 9 brands from 3 producing areas were collected from the market.The tea polyphenols,amino acids,caffeine,soluble solids,pH and sensory evaluation were studied.The results showed that there were significant differences in the main taste substances,pH and sensory scores of different green tea products,and there were also differences in the sensory scores of green tea drinks from different regions of the same brand.Among the 13 different green tea drinks,11 of them met the national standard for tea polyphenols and12 of them met the national standard for caffeine.
