植物乳杆菌冷冻干燥保护剂筛选及加速储存稳定性研究 被引量:4

摘要 试验研究植物乳杆菌冷冻干燥保护剂筛选及产品稳定性。利用单因素正交试验筛选保护剂,得到植物乳杆菌冻干保护剂配方,通过37、50、60℃加速储存试验数据,搭建储存稳定性方程预测其储存周期。结果表明,保护剂配方为海藻糖15%、脱脂乳10%、硫代硫酸钠1%、磷酸氢二钾0.3%。同批冻干样品储存稳定性方程为:Lg K=-8 650/T+25.522,并由此计算出4℃热降解速率常数为-2.04×10-6,植物乳杆菌冷冻干燥得率在90%以上,产品在4℃储存45 d活菌数基本不变,活菌得率在95%以上。 The experiment studied plant Lactobacillus freeze-drying protector screening and product stability. Using the single-factor protective agent screening and orthosis test results, the formula of plant Lactobacillus freeze-dried protective agent was obtained, and the experimental data were stored at an accelerated rate of 37, 50, 60 ℃, and the storage stability equation was set up to predict its storage cycle. The results showed that the formulation of protective agents was 15%seaweed sugar, 10% skimmed milk, 1% sodium sulfate and 0.3% potassium phosphate. The storage stability equation for the same batch of freeze-dried samples was Lg K=-8 650/T-25.522, and the thermal degradation rate constant of 4 ℃ was calculated to be-2.04×10-6, the rate of freezing and drying of plant Lactobacillus was more than 90%, the number of live bacteria stored in the product at 4 ℃ for 45 d was basically unchanged, and the rate of live bacteria was more than 95%.
