高原地区的青稞酒大曲合理储存期研究

Study on the Reasonable Storage Period of Daqu in Highland Barley Baijiu

在高原地区青稞酒的酿造过程中,高原地区的青稞大曲提供了酶系、菌系,因此高原地区青稞大曲的质量对高原地区青稞酒的质量有着决定性的影响。通过对储存期的高原地区青稞大曲理化指标、微生物指标及酿造应用进行为期六个月的跟踪检测和分析,确定青稞大曲的合理储存期。

In the process of highland barley baijiu brewing, highland barley Daqu provides enzymes and bacteria, so the quality of highland barley Daqu has a decisive impact on the quality of highland barley baijiu. In this study, the physicochemical indexes,microorganism indexes and brewing application of highland barley Daqu were tracked and analyzed for six months to determine the reasonable storage period of highland barley Daqu.
