摘要
通过对比法对大曲贮存的方式进行探究,通过两种方式贮存后对大曲的理化指标和耗损进行对比,最终确定十里香大曲目前较好的贮存方法为覆盖法,此方法可使大曲贮存过程中酸度耗损降低2.1%、淀粉耗损降低1.38%、重量耗损降低0.87%、糖化力耗损降低9.7%、发酵力耗损降低22.6%、液化力耗损降低278%,通过此种方法贮存大曲,除理化指标损耗降低外,一年可降低大曲损耗35吨。
This article explores the storage conditions of Daqu through the comparison method, and compares the physical and chemical indicators and wear of Daqu later by the two methods, and finally determines that the better storage method for Shilixiang Daqu is the covering method, which can improve the acidity of Daqu during storage. Reduce consumption by 2.1%, starch loss by 1.38%, weight loss by 0.87%,saccharification power loss by 9.7%, fermentation power loss by 22.6%, and liquefaction power loss by 27.8%. This method of storage of Daqu will reduce the loss of physical and chemical indicators. In addition, it can reduce the loss of Daqu by 35 tons a year.
