摘要
菠萝浓缩汁发生褐变会影响菠萝果汁或菠萝饮料的颜色,需要对此进行防控。阐述菠萝浓缩汁加工过程中发生褐变的机理,并有针对性地提出抑制褐变的技术方法,以期为提高菠萝浓缩汁相关产品品质提供参考。
Browning of concentrated pineapple juice can affect the color of pineapple juice or pineapple drink,which needs to be controlled.This paper expounded the mechanism of browning during the processing of concentrated pineapple juice,and put forward the technical methods to control browning,in order to provide reference for improving the quality of related products of concentrated pineapple juice.
