摘要
目的为提高原料利用率,优化鹿茸多肽酶解工艺条件。方法采用响应面法对多肽酶解体系的酶解温度、pH、加酶量、时间等因素进行考察,以鹿茸多肽含量为评价指标优化鹿茸多肽酶解工艺。结果鹿茸原料得到充分利用,多肽酶解工艺合理、可行。结论在50℃、pH8.0、加酶量3.5%的条件下酶解2 h为鹿茸多肽的最佳酶解工艺。
Objective To optimize the enzymatic hydrolysis conditions of velvet antler polypeptide and improve the utilization rate of raw materials.Method The response surface method was used to investigate the enzymatic hydrolysis temperature,pH,enzyme dosage and time of the enzymatic hydrolysis system.The velvet polypeptide content was used as the evaluation index to optimize the enzymatic hydrolysis process of velvet antler polypeptide.Result The enzymatic hydrolysis process of pilose antler polypeptide was reasonable and feasible.Conclusion The optimal enzymatic hydrolysis process of velvet antler polypeptide was carried out by enzymolysis for 2 h at 50℃with pH of 8.0 and enzyme addition of 3.5%.
