摘要
通过研究5种不同配方窖泥培养过程中理化性质变化规律、感官评价,结果表明,不同配方人工窖泥的理化性质在培养过程中存在明显差异,氨态氮、有效磷、腐殖质和有机酸有相似的变化趋势;配方方案A、B中水分、pH值、全氮、速效钾与方案E具有不同的变化趋势;通过主成分分析,发现水分、pH值、腐殖质、速效钾、有效磷、氨态氮对窖泥培养有重要影响,乙酸、乳酸、己酸、乙酸乙酯、丁酸乙酯、己酸乙酯、乳酸乙酯对优质窖泥的品质有积极贡献。将5种窖泥可区分开来,筛选出方案A为最优配方。
Through the analysis of the physicochemical properties and sensory indexes of the artificial pit mud with five different formulas,it was found that the physicochemical properties of pit mud with different formulas were different in the cultivation process.The change trends of ammonia nitrogen,available phosphorus,humus and organic acids were similar;the change trends of moisture content,pH value,total nitrogen and available potassium in formula A and B were different from those in formula E.Through principal component analysis,it was found that moisture,pH value,humus,available potassium,available phosphorus and ammonia nitrogen had important effects on the cultivation of pit mud,and acetic acid,lactic acid,caproic acid,ethyl acetate,ethyl butyrate,ethyl caproate and ethyl lactate had positive contribution to the high quality of pit mud.Among the five different formulas of artificial pit mud,formula A was the best.
