酱香型白酒生产工艺及关键工艺原理简述 被引量:19

摘要 酱香型白酒在茅台酒的带领下掀起了一股酱香热潮,各地酒厂纷纷进军酱香领域,但是目前对酱香型白酒生产工艺及原理完整、系统的研究较少。酱香型白酒不仅依赖于独特的“四高两长”工艺,各个工艺流程的参数变化对最终酒体质量都存在极大的影响。本文对酱香型白酒生产工艺及具体操作进行了梳理,并对关键工艺原理进行了阐述,旨在为各酒企工艺优化提供理论依据。 Led by Moutai Liquor,Jiangxiang Baijiu has set off a craze among consumers,and distilleries all over China have entered the field of Jiangxiang Baijiu.However,there is a lack of comprehensive and systematic research on the production process and principles of Jiangxiang Baijiu.Jiangxiang Baijiu relies on the unique production processes of“four highs and tow longs”,and the changes in the parameters of each process have a great impact on the final liquor quality.In this paper we summarized the production technology and specific operations of Jiangxiang Baijiu,and expounded the principles of the key processes,so as to provide theoretical basis for the process optimization of distilleries.
