摘要
综述了多糖的来源,天然生物活性、分离、表征和结构特征.此外,本文还提出功能化多糖可能会创造新的机会,以最大限度地利用多糖的各种有价值的特性,特别是细胞壁多糖.本文旨在综述新颖的策略研究和开发具有功能性的多糖,以及在食品领域中的应用潜力.
The natural polysaccharides from different sources have been studied and used widely in different fields such as food,medicine and pharmacy,and biological materials.In recent years,due to the biocompatibility,biodegradability,non-toxicity of polysaccharides,people focus on finding bioactive polysaccharides for various new applications.This article reviewed the sources,natural biological activities,isolation,characterization,and structural characteristics of polysaccharides.In addition,this article also provides that these functional polysaccharides may create new opportunities to maximize the use of their various valuable properties,especially the cell wall polysaccharides.This article aims to review novel strategies to research and develop the functional polysaccharides with the application potential in food.
