摘要
蔬菜不仅在人们的日常饮食中扮演着重要角色,且对我国农产品出口贸易贡献巨大,然而重金属污染逐渐成为威胁我国蔬菜生产与人体健康的主要危害之一.该文概述了蔬菜重金属风险评估的国内外动态、风险评估步骤、风险评估方法等的研究现状和发展趋势,旨在为相关学者的研究建立适合我国国情的评估方法与标准提供参考.
Vegetables not only play important roles in people’s daily diet,but also make great contributions to the agricultural product export trade in China.However,the pollution of heavy metals has gradually become one of the significant factors threatening vegetable production and human health.The research status and trends on risk assessments of heavy metals in vegetables were summarized here,which contains progress at home and abroad,steps and methods of risk assessments,and so on.It will provide references to establish assessment methods and standards suitable for our national situation.
