延后栽培对‘夏黑’和‘巨玫瑰’果实品质及挥发性香气物质的影响 被引量:6

摘要 以避雨栽培8年生‘夏黑’与‘巨玫瑰’为试材,运用延后栽培技术培育正常成熟与延后成熟葡萄,测定其果实基本品质与香气物质含量,并分析香气活性值与香气特征轮廓差异。结果发现,两个品种延后果的可溶性固形物、还原糖含量均高于正常果,而可滴定酸含量与粒质量均低于正常果。正常和延后‘夏黑’中乙酸乙酯、己醛、反式-2-己烯醛含量与香气活性值较高;‘巨玫瑰’有较高含量的乙酸乙酯和异戊醇,同时芳樟醇、香叶醇香气活性值较高。香气特征轮廓图显示,‘夏黑’主要呈现果香味、清香味,而延后果较正常果的玫瑰香风味更加浓郁;‘巨玫瑰’香气特征无差异,均呈现花香、玫瑰香风味,但延后果的气味强度低于正常果。 Using eight-year-old normal and delayed cultivated'Summer Black'and'Jumeigui'as materials,Analyzed basic fruit quality,aroma contents value and the aroma activity value,aroma characteristic.The results showed that the soluble solid content and reducing sugar content of the two delayed cultivation grapes were higher than the normal cultivation,while the titratable acid content and berry weight were lower than the normal.The content of ethyl acetate,hexanal and trans-2-hexenal and the aroma activity value in'Summer Black'grape were very high;'Jumeigui'had higher content of ethyl acetate,isoamyl alcohol,and Linalool and geraniol had higher aroma activity values.The radar map of aroma characteristics showed that'Summer Black'mainly presented fruity and refreshing flavors,while the delayed cultivation presented more rose aroma intense than normal;The delayed and the normal'Jumeigui'had the same aroma characteristics,s howed floral and rose flavors,but all odor intensity in delayed cultivation was lower than normal.
