包装形式和储藏温度对婴幼儿配方乳粉中益生菌活菌数的影响研究

摘要 考察了包装形式和储藏温度对婴幼儿配方乳粉中益生菌活性的影响。将CO_(2)包装、氮气包装和普通包装的含有动物双歧杆菌的婴配粉分别贮藏于室温、37℃、50℃条件下,分别在不同时间测定婴配粉中益生菌活菌数。结果表明,包装形式和温度对益生菌活菌数的稳定性影响较大。室温条件下可较好的维持产品品质,当储藏温度升高至30℃及以上时,益生菌活菌数随温度的升高显著降低;氮气包装更有利于婴配粉中益生菌的存活。综上所述,含有益生菌的婴配粉在常温充氮包装下可存放2年,其活菌数大于1.0×10^(6) CFU/g。 The effects of packaging form and storage temperature on the activity of probiotics in infant milk powder were investigated.The milk powders of Bifidobacterium animalis in CO_(2) packaging,nitrogen packaging and ordinary packaging were stored at room temperature,37℃,and 50℃,respectively,and the number of viable probiotic bacteria in the milk powder was determined at different times.The results show that the packaging form and temperature have a greater impact on the stability of probiotic powder,and the product quality can be better maintained at room temperature.When the storage temperature rises by 30℃ and above,the number of viable probiotic bacteria increases significantly with the increase in temperature reduce.At the same time the packaging test proved that nitrogen packaging is more conducive to the storage of probiotic milk powder.Probiotic milk powder is stored in nitrogenfilled packaging at room temperature for 2 years,and its viable cell count is greater than 1.0×10^(6) CFU/g.
