摘要
石榴籽含有丰富的营养成分,还具有优良的功能特性。本文对石榴籽的主要营养成分(脂肪酸、多酚、多糖、蛋白质)提取和功能活性(抗氧化、抗病毒、抗癌、保护心血管系统等)方面的研究进展进行了概述,并总结石榴籽在食品、药品、饲料等领域的应用现状,旨在能为石榴籽资源的综合利用提供参考。
Pomegranate seed is rich in nutrients and has excellent functional properties.In this paper,the main nutritional components(fatty acids,polyphenols,polysaccharides,proteins)extraction and functional activities(antioxidant,antiviral,anticancer,protection of cardiovascular system,etc.)of pomegranate seed were summarized,and the application status of pomegranate seed in food,medicine,feed and other fields was summarized in order to provide reference for the comprehensive utilization of pomegranate seed resources.
