摘要
鲜切马铃薯作为一种新型工业化食品备受关注,如何抑制褐变、保持产品新鲜度成为关键控制技术。通过综述各类鲜切马铃薯保鲜方法,以期为研究者和生产者提供一定的参考依据。
Fresh-cut potato as a new type of industrial food had attracted much attention,how to control browning and keep the freshness of products had become the key control technology.In order to provide some reference for researchers and producers,the preservation methods of fresh-cut potato were summarized.
