摘要 白酒是中国的国酒,具有悠久的历史,是传统文化的典型代表元素之一,在国民经济中占有重要地位。其不仅从物质上,也从精神上满足了人们对美好生活的需求。鉴于此,白酒的风味和健康功效一直是人们的研究热点。本文综述近年来白酒风味和健康功效方面的研究方法,取得的成绩以及存在的问题,提出未来的研究方向,旨在为白酒行业乃至整个酿酒行业的健康发展提供借鉴。 Baijiu is Chinese national liquor with a long history.It is also a typical representative element of traditional culture and occupies an important position in the national economy.It meets people's needs for a better life not only from material,but also from the spirit.In view of this,the flavor and health benefits of Baijiu have always been the research focuses.This paper summarized the research methods,achievements and problems of Baijiu in two aspects of flavor and health efficacy in recent years,and put forward the future research directions.The aim was to provide a reference for the healthy development of Baijiu industry and even the whole liquor-making industry.
