摘要
为了研究不同生长速度鸡种肉品质差异,选取同一饲养条件下的白羽肉鸡(哈伯德、WOD168),快、中、慢速型黄羽肉鸡(新广铁脚麻鸡、裕禾麻鸡、港丰瑶黑麻鸡、清远麻鸡)等6个鸡种(配套系)为试验素材,分别采集各鸡种上市日龄胸肌样品,测其常规肉品质、肌苷酸和氨基酸含量。结果表明:清远麻鸡系水力值最高,哈伯德最低;清远麻鸡与裕禾麻鸡肉色亮度值高于其他品种;清远麻鸡和港丰瑶黑麻鸡肌苷酸含量、氨基酸总量、必需氨基酸含量和鲜味氨基酸含量显著高于其他品种(P<0.05),而WOD168相应含量最低。不同生长速度类型的肉品质测定结果为肉鸡品质指标选育和肉质风味评价提供了基础数据。
In order to study the quality differences of chicken breeds with different growth rates,six chicken breeds(synthetic lines)including white broilers(Hubbard and WOD168),and fast/medium/slow types yellow-feathered broilers(Xinguang partridge shank chicken,Yuhe chicken,Gangfeng Yao chicken synthetic strain and Qingyuan partridge chicken)were selected as experimental materials under the same feeding conditions.The breast muscle samples of each chicken breed(synthetic*line)at the age of marketing day were collected,and the conventional traits,inosine ac id and amino acid content were tested.The results showed that the water capacity of Qingyuan chicken was highest and the Hubbard was lowest in all breeds;The meat color brightness value of Qingyuan chicken and Yuhe chickens were higher than that of other breeds;the inosinic acid content,the total amino acid content,essential amino acid content and flavor amino acid content of Qingyuan chicken and Gangfeng Yao chicken synthetic strain were significantly higher than that of other breeds(P<0.05),and WOD168 was the lowest.The results of meat quality measurement of different growth speed types provided basic data for quality index selection and meat flavor evaluation of broilers.
