2018年-2019年杭州市售花生制品中4种黄曲霉毒素污染水平调查 被引量:5

Investigation on contamination of 4 aflatoxins in peanut products in Hangzhou from 2018 to 2019

摘要 目的 了解杭州地区市售花生制品中黄曲霉毒素B1(AFB1)、黄曲霉毒素B2(AFB2)、黄曲霉毒素G1(AFG1)和黄曲霉毒素G2(AFG2)的污染状况,为食品安全监管部门花生制品质量监管提供依据。方法 2018年-2019年在杭州主城区的农贸市场、商店、超市随机采集杭州市售花生制品,采用超高效液相色谱-串联质谱法进行4种黄曲霉毒素的检测。结果 158份花生制品中(包括22份花生油,45份花生酱,91份熟制花生)黄曲霉毒素阳性样品共49份,总检出率为31. 0%;2份熟制花生样品中AFB1超标,花生油和花生酱没有超标样品;4种黄曲霉毒素中以AFB1的检出率和检出浓度最高,检出率为31. 0%,阳性样品浓度为0. 042 0μg/kg~81. 4μg/kg。结论 杭州地区市售花生制品中存在一定的黄曲霉毒素污染,但污染水平较轻,4种毒素中以AFB1污染为主。 Objective To investigate the contamination status of four aflatoxins(AFs)including AFB,AFB2,AFG,and AFG2 in peanut products in Hangzhou City,so as to provide basis for the safety monitoring div isions to monitor the quality of peanut products.Methods From 2018 to 2019,the peanut products samples were randomly ollected from farmers’market,shops and supermarkets in Hangzhou,and the four AFs were detected by ultra performance liquid chromatography-tandem mass spec-trometry.Results A total of 158 peanut products samples including 22 peanut oil samples,45 peanut butter samples and 91 cooked peanut samples were determined.The results showed that 49 positive samples were detected among the 158 samples,with the total detection rate of 31.0%.AFB in 2 cooked peanut samples exceeded the national hygienic standards,peanut oil samples and peanut butter samples were all qualifed.AFB:was detected more frequently with higher levels than the other three AFs.The positive ratio was 31.0%,with the content range of 0.0420μg/kg-81.4μg/kg.Conclusion Peanut products were partly contaminated with AFs in Hangzhou,but the pollution level is relatively mild,and AFB is the major pollution factor among the four AFs.
