廊坊市100份生鲜肉馅中食源性致病菌污染状况的监测与分析

摘要 目的了解廊坊市生鲜肉馅食源性致病菌的污染情况,确保居民食用生鲜肉馅的安全性,预防食源性疾病的发生。方法依据《国家食品污染和有害因素风险工作手册》及《河北省食品微生物及其致病因子监测技术指南》对廊坊市各县抽检100份生鲜肉馅进行食源性致病菌检验。结果100份肉馅中检出9份样品含有沙门菌;4份含有小肠结肠炎耶尔森菌;5份含有金黄色葡萄球菌。结论廊坊市生鲜肉馅中存在较高的致病菌污染风险,卫生防疫部门应引起高度重视。 Objective To understand the contamination situation of foodborne pathogens in fresh meat stuffing in Langfang,to ensure the safety of fresh meat stuffing eaten by residents,and to prevent the occurrence of foodborne diseases.Methods One hundred samples of fresh meat stuffing from counties in Langfang were subject to foodborne pathogen testing according to National Workbook on Food Pollution and Risks of Harmful Factors and Technical Guide for Monitoring Food Microorganism and Corresponding Pathogenic Factors in Hebei.Results Nine strains of Salmonella,four strains of Yersinia enterocolitica and five strains of Staphylococcus aureus were positive in 100 fresh meat stuffing.Conclusion Fresh meat stuffing is found to have high risk of being contaminated by pathogenic bacteria.Health and epidemic prevention authorities are recommended to pay high concerns.
