果蔬汁品质监测及货架期预测研究进展 被引量:1

Research Progress of Fruit and Vegetable Juice Quality Monitoring and Shelf Life Prediction

摘要 近年来,随着消费者对果蔬汁品质提升的需求,果蔬汁的发展越来越受到人们的重视。货架期是消费者了解果蔬汁质量的重要依据之一,对确保果蔬食品安全具有重要意义。文章综述了国内外品质监测的指标及货架期预测模型研究进展,并展望了发展趋势,以便于合理而准确地预测果蔬汁保质期,满足消费者对果蔬汁安全、新鲜和营养等更高要求。 In recent years,with the demand of consumers for the improvement of the quality of fruit and vegetable juice,more and more attention has been paid to it.Shelf life is one of the important basis for consumers to understand the quality of fruit and vegetable juices,and it is of great significance to ensure the safety of fruit and vegetable foods.This article summarizes the research progress of quality monitoring indicators and shelf life prediction models domestic and overseas,and prospects the development and trends,so as to predict the shelf life of fruit and vegetable juices reasonably and accurately,and meet consumers’ higher requirements for the safety,freshness and nutrition of fruit and vegetable juices.
