摘要
餐饮为旅游产业提供生产要素和旅游吸引物,旅游为餐饮产业输送客源,二者的融合可以促进产业价值链的提升、产业创新能力的提高和产业资源的共享,进而实现产业的优化升级。山西拥有丰富的旅游资源和餐饮资源,为餐饮产业和旅游产业融合提供了有利的外部环境,但二者融合程度不深,效益不明显,一定程度限制了餐饮产业的发展壮大。文章基于对餐饮产业和旅游产业融合现状及问题的分析,借助赫芬达尔指数测度二者融合程度,进而提出与旅游产业主动融合、被动融合和互动融合的山西餐饮产业升级路径。
Catering can be regarded as the production factor and tourist attraction of tourism industry,and tourism can transport tourists for catering industry.The integration of the two can promote the upgrading of the industrial value chain,the improvement of industrial innovation capabilities and the sharing of industrial resources,and thus optimization and upgrading of industry is realized.Shanxi has rich tourism resources and catering resources,which provides a favorable external environment for the integration of catering industry and tourism industry.However,the degree of integration between the two is not deep and the benefits are not obvious,which limits the development of the catering industry.Based on the analysis of the status quo and problems of the integration of catering and tourism industry,the Herfindahl index is used to measure the degree of integration,and then the industrial upgrading path of active integration,passive integration and interactive integration of Shanxi catering industry and tourism industry is proposed.
