摘要 经济的快速发展促进了人们生活水平的提高,与此同时人们对于食品的卫生和质量问题也更加重视。科学的检测技术可以对食品成分进行有效的测定分析,铅、镉、汞等重金属元素摄入过量会对人体造成严重的危害,重金属含量超标的食品流入市场被食用后这些元素会在人体进行蓄积,当超过一定的浓度之后人体的血液循环、中枢神经以及器官正常运作都会受到影响。重金属元素检测已经成为食品安全监督管控的重要内容,本文重点就重金属元素的检测方法进行了分析,希望可以为食品检测机构行业的工作提供参考。 The rapid development of economy has promoted the improvement of people’s living standard. At the same time, people pay more attention to the hygiene and quality of food. Scientific detection techniques for the determination of food ingredients for effective analysis, heavy metals such as lead, cadmium, mercury from eating too much will cause serious harm to human body, heavy metal content in excessive amounts of food eaten into the market after these elements will accumulate in the body, after more than a certain concentration of the body’s blood circulation, central nervous and organ function will be affected. The detection of heavy metal elements has become an important part of food safety supervision and control. This paper focuses on the analysis of detection methods of heavy metal elements, hoping to provide reference for the work of food testing institutions and the industry.
