驴肌肉与脂肪组织中脂肪酸与胆固醇含量的分布规律

Distribution of fatty acid and cholesterol content in muscle and adipose tissue of donkey

试验旨在研究德州驴肌肉及脂肪组织中的脂肪酸和胆固醇含量的分布规律。试验选取8头德州驴进行屠宰,采集背最长肌、股二头肌、臂三头肌及臀肌和皮下脂肪、大网膜脂、肠系膜脂及肾脂,分析不同部位的肌肉与脂肪组织中脂肪酸和胆固醇含量的分布规律。结果显示,股二头肌、臂三头肌、臀肌中含有较高的不饱和脂肪酸(UFA)、n-6多不饱和脂肪酸(PUFA)含量及U/S、P/S。皮下脂肪、肠系膜脂中含有较高的UFA含量。皮下脂肪中含有较高的n-3PUFA、n-3LCPUFA含量。驴的肌肉和脂肪组织中C16∶0、C18∶2n6c、饱和脂肪酸(SFA)、单不饱和脂肪酸(MUFA)、PUFA、n-6PUFA具有相似的分布范围,分别为21%~26%、19%~21%、31%~39%、33%~44%、21%~29%、19%~22%。脂肪组织的C18∶1n9c、C18∶3n3、n-3PUFA及U/S、P/S均高于肌肉组织,但脂肪组织中C20∶5n3、C22∶6n3和n-6/n-3低于肌肉组织。胆固醇含量在不同的肌肉组织或脂肪组织间无显著性差异(P>0.05)。

The experiment was to study the content of fatty acids and cholesterol in muscle and adipose tissue of Sanfen donkey. Eight sanfen donkeys were slaughtered. The longissimus thoracis muscle, semitendinosus muscle, triceps brachii muscle and gluteus muscle, and subcutaneous adipose tissue, omentum fat, mesentery fat and kidney fat were collected to analyze the distribution of fatty acids and cholesterol content in muscle and adipose tissue of different parts of donkey. The results showed that the biceps femoris, triceps brachii, and gluteal muscles contained higher UFA, n-6PUFA content and U/S, P/S. Subcutaneous fat and mesenteric fat contained higher UFA content. Subcutaneous fat contained high content of n-3PUFA and n-3LCPUFA. C16∶0, C18∶2n6c, SFA, MUFA, PUFA, and n-6PUFA in donkey muscle and adipose tissue had similar distribution ranges, which were 21%~26%, 19%~21%, 31%~39%, 33%~44%, 21%~29%, 19%~22% respectively. C18∶1n9c, C18∶3n3, n-3PUFA, U/S and P/S of adipose tissue were higher than muscle tissue, but adipose tissue C20∶5n3, C22∶6n3 and n-6/n-3 are lower than muscle tissue. There was no significant difference in cholesterol content among different muscle tissues or adipose tissues(P>0.05).
