摘要
以花生壳为试验原料,研究挤压膨化(EE)制备可溶性膳食纤维(SDF)工艺参数,并探讨改性前后SDF的功能结构特性。结果表明,最佳工艺参数为螺杆转速200 r/min,挤压温度130℃,物料含水量20%。在此条件下,SDF提取率达到22.3%。control-SDF和EE-SDF对·OH、O2-·和DPPH的清除能力IC50分别为4.16,4.09,7.90 mg/mL和3.32,3.19,3.09 mg/mL;在肠道环境下control-SDF和EE-SDF对3种重金属离子(Pb、As和Cu)吸附作用,CBmax分别为(239.5±2.5),(198.5±2.9),(100.4±3.1)μmol/g和(378.5±5.3),(278.3±3.2),(167.2±2.5)μmol/g,CBmin分别为(90.5±1.6),(126.4±4.1),(155.3±4.2)μmol/L和(30.4±1.3),(63.4±3.7),(1.3±4.2)μmol/L。改性后SDF颗粒更致密,表面具有明显蜂窝状结构,分布均匀。因此,采用挤压膨化改性花生壳膳食纤维切实可行。
With peanut shell as raw material,the process parameters of extrusion expansion(EE)extraction of SDF was researched and compared to the functional and structure properties.The result showed that optimum condition was screw speed 200 r/min,temperature 130℃and water content 20%.Under such condition,the SDF extraction yield was 22.3%.The·OH,O2-·and DPPH free radicals with an IC50of control-SDF and EE-SDF were 4.16,4.09,7.90 mg/mL and 3.32,3.19,3.09 mg/m L,respectively.The CBmax were(239.5±2.5),(198.5±2.9),(100.4±3.1)μmol/g and(378.5±5.3),(278.3±3.2),(167.2±2.5)μmol/g,respectively;the CBmin were(90.5±1.6),(126.4±4.1),(155.3±4.2)μmol/L and(30.4±1.3),(63.4±3.7),(1.3±4.2)μmol/L of SDF for Pb,As and Cu under intestinal environment.Electron microscopy showed that there was porous network like honeycomb and swelled structure of extrusion SDF.
